Austrians call their sparkling wine "shaumwein." Here's a cocktail showcasing some of their finest exports, utilizing inexpensive Cava Brut as the delivery vehicle for the goodness.

1 oz Monopolowa Potato Vodka
1/2 oz Rothman & Winter Orchard Pear Liqueur
1/2 oz Rothman & Winter Orchard Apricot Liqueur
1/2 oz Lemon Juice
3 oz Cava Brut (or Crémant)

Put the liqueurs, the juice & the vodka in a cocktail shaker with ice. Shake it up. Strain into a Champagne glass, top off with Cava and garnish with citrus peel.
